  3. 1 tbsp sunflower oil

  4. 3 Spring onions, chopped

  5. 2 Pieces of root ginger (about 1 inch cubed), shredded

  6. 500g (1lb) Boned Chicken Breast, cut into strips

  7. 2 tbsp Light soy sauce

  8. 2 tbsp Dry sherry

  9. 2 Green Peppers, cut into strips

  10. 425g (15oz) Tin of sweetcorn, drained

  11. Procedure **

  12. 1) Heat the oil in a wok.

  13. 1 minute.

  14. 3) Add the chicken and brown lightly.

  15. 2 minutes.

  16. 5) Pile onto a warmed serving dish and serve immediately.

  17. Serving suggestion: serve with either long grain rice, or noodles.
