  5. Chicken stock

  6. Nuoc cham sauce

  7. Galangal, finely chopped

  8. Star anise

  9. Cinnamon sticks

  10. Sugar

  11. Boneless, skinless chicken (preferably breast meat)

  12. Spring onions (scallions), diagonally sliced

  13. Rice noodles

  14. Small red chilies, finely chopped

  15. Limes, quartered

  16. Salt (to taste)

  17. Pepper (to taste)

  18. Crispy fried shallots

  19. Crushed roasted peanuts

  20. Coriander (cilantro) leaves

  1. Pour the stock into a large pot.

  2. Add nuoc cham sauce, galangal, star anise,cinnamon, sugar and season to taste with salt and pepper.

  3. Simmer for 10 minutes. Add the chickenmeat and simmer for a further 20 minutes.

  4. Remove the chicken to a plate. Shred itand place the shreds in a bowl.

  5. Cook the rice noodles and divide thembetween 4 large bowls.

  6. Divide the chicken shreds between thebowls and pour over the strained chicken soup.

  7. Place all the remaining ingredients on thetable in small bowls so that everyone can help themselves.
