  1. 3 tablespoons 45ml Oil

  2. 2 cups 125g / 4.4oz Halved and sliced red onions

  3. 2 cups 125g / 4.4oz Halved and sliced yellow onions

  4. 2 cups 474ml Halved and sliced shallots

  5. 1 cup 237ml White wine vinegar

  6. 3 teaspoons 15ml Sugar

  7. Salt - to taste

  8. Freshly-ground black pepper - to taste

  1. Heat oil in a medium saucepan. Add onions and slowly cook, stirring often. As they begin to dry up add vinegar and sugar. Cook for 30 to 35 minutes, until soft, brown and very sweet. Season with salt and pepper to taste.
