  1. 1/4c butter

  2. 1c medium onion , chopped

  3. 1 clove garlic, minced

  4. 1c raw long-grain rice

  5. 2 1/2c chicken broth

  6. 2T parsley , chopped

  7. 1/2t dill

  8. 1/4t mint

  9. 1/2t salt

  10. 1/4t pepper

  11. 1/4c pine nut s

  12. 1/4c golden raisin s

  1. Melt butter in small skillet. Add the onion and garlic and sauté until golden. Pour into a 2 quart casserole. Add the rice, chicken broth, parsley, dill, mint, raisins, salt and pepper. Stir well; cover the casserole and bake at 375° for 30 minutes or until liquid is absorbed. Brown the pine nuts in 2T butter. Fluff the rice and stir in the pine nuts before serving.
