  1. 7 cups sugar

  2. 1 cup quick cooking tapioca

  3. 1 tsp. salt

  4. 14 drops almond flavoring

  5. 7 cups water

  6. 3 tbsp. lemon juice

  7. 9 lbs cherries PITTED

  8. Blend the dry ingredients and add the water and flavoring. Cook on medium high heat and stir until thickened and bubbly. Cook an additional 2 min and add lemon juice.

  9. Add the cherries to the sauce. Gently stir and bring to a rolling boil for 1 min.

  10. Ladle mixture into hot jars, leaving 1/2 inch headspace (From the top of jar)

  11. Adjust lids and process in a boiling hot water bath for 25 minutes.

  12. Makes about 6 quarts
