  1. Ingredients 2 1/2 cups (625ml) milk 1/3 cup (85ml) semolina 1 tbsp (15ml) instant coffee 1/2 cup (125ml) sugar SAUCE 1/4 cup (60ml) brown sugar 2/3 cup (165ml) milk 5 tbsp (75ml) cocoa powder

  1. Method : Warm milk in a pan, then sprinkle in semolina, coffee and sugar. Bring to a boil, stirring continuously and still stirring, cook for a few more minutes until mixture thickens. Divide mixture between four 2/3 cup (165ml) molds than have been rinsed in cold water. Leave to cool and set. Place all sauce ingredients in a pan. Stir over low heat to dissolve sugar and then coil for a few minutes, stirring continuously until sauce becomes smooth and thick. Serve hot or cold, over turned-out molds.
