  1. 1 cup whole wheat pastry flour

  2. 1 1/2 cups oats

  3. 1/2 teaspoon baking powder

  4. 1/2 teaspoon baking soda

  5. 1/4 teaspoon salt

  6. 1/2 cup firmly-packed brown sugar

  7. 2 egg whites

  8. 2 tablespoons no suger added applesauce

  9. 1 very ripe medium banana , mashed

  10. 1 teaspoon vanilla extract

  11. 1 cup dried fruit

  1. Preheat oven to 350 degrees.

  2. In a large bowl, combine flour, oats, baking powder, baking soda, salt and sugar.

  3. Add egg whites, applesauce and vanilla. Mix well with a wooden spoon.

  4. Fold in dried fruit.

  5. Drop by tablespoon full on to baking sheet lined with parchment or silicone mat.

  6. Bake for 12 minutes or until lightly golden.
