  1. 2 md Onions, coarsely chopped

  2. 2 lg Red potatoes, diced

  4. 3 Granny Smith apples, peeled,

  5. -cored and chopped

  6. 1 md Celery root, peeled and -diced

  7. 2 tb Vegetable oil

  8. 1 ga Chicken stock

  9. Salt and pepper

  10. Chopped chives for garnish

  1. In a large pot, saute onions, potatoes, apples, and celery root in the oil.

  2. When the onions are soft, add the chicken stock.

  3. Bring to a boil, then lower to a simmer and cook for about 40 minutes, until all the vegetables are very soft.

  4. Force through a sieve for puree in a blender.

  5. Return to pot and reheat.

  6. Add salt and pepper to taste.

  7. Serve garnished with chopped chives if desired.
