  1. 1 1/2 cups (185 g) icing sugar, sifted

  2. 2 tablespoons pineapple juice

  3. 2 teaspoons unsalted butter

  4. Combine the icing sugar, pineapple juice and butter in a small heatproof bowl. Stand bowl in saucepan of simmering water, stirring until the butter has melted and the icing is glossy and smooth. Cool slightly. Drizzle the icing over the cake with a spoon.
