  1. 4 White fish fillets - (6 oz ea), such as

  2. Lemon sole

  3. Milk - for soaking

  4. 4 tablespoons 60ml Olive oil

  5. Flour for dredging - seasoned with

  6. Cayenne pepper, paprika, dried thyme,

  7. White and black pepper, and salt

  8. Garnish

  9. Pickled Onion - seeNote

  10. Sara's Remoulade sauce - seeNote

  2. In a shallow baking dish, soak the fish in milk for about 10 minutes. In a heavy saute pan heat the olive oil over medium-high heat until it is hot but not smoking. Remove the fish from the milk and dredge it in the seasoned flour. Saute the fish for 2 to 3 minutes on each side, or until it just flakes. Serve immediately.
