  1. 2T butter

  2. 1 cup onion finely chopped

  3. 1/2 cup med red bell pepper finely chopped

  4. 2 garlic cloves minced

  5. 1 egg beaten

  6. 1/3 cup beef broth

  7. 1 tsp. Worcestershire sauce

  8. 1 tsp. soy sauce

  9. 1 1/2 pound ground beef

  10. 1/2 cup bread crumbs

  11. 3 slices thick smoked bacon

  1. In a large skillet, melt the butter over medium heat. Add the onions, bell pepper, and garlic. Cover and cook for 5 minutes. Uncover and cook, stirring often, for another 4 to 5 minutes, or until the vegetables are lightly browned. Remove from the heat and cool to room temperature.

  2. Position a rack in the middle of the oven and preheat the oven to 350 degrees F. In a medium bowl, whisk together the egg, beef broth, Worcestershire sauce, and soy sauce until well blended. In a large bowl, combine the ground beef with the onion mixture, the egg mixture, and bread crumbs. Mix lightly but thoroughly. Transfer the meat mixture to a loaf pan. Arrange the bacon strips on top, overlapping them slightly if necessary.

  3. Bake for 1 hour to 1 hour 15 minutes. Remove the loaf from the pan and let the loaf stand on a rack for 10 minutes before slicing. Yield: serves 8 Notes: Great with mashed potatoes; also excellent cold in a sandwich.
