  1. In a medium to large size skillet heat oil adding your chopped garlic first then, your peppers,scallions,mushrooms, then your bologna. Saute ingredients until soft texture, then add your beaten eggs, mixing together, but don't scramble. Place cheese on top and place underneath broiler or salamander cooking the eggs and melting the cheese. This recipe takes minutes so don't walk away.
