  1. 1 (5 ounce) can evaporated skim milk

  2. 1 teaspoon cornstarch

  3. 8 ounces fat free cream cheese

  4. 1/2 lb mushroom , sliced

  5. 6 scallions , chopped

  6. 1 lb fettuccine salt and pepper

  1. Mix 1 teaspoon cornstarch and 1 teaspoon skim milk in a saucepan.

  2. Add the rest of the skim milk and bring to a boil.

  3. Lower heat to medium and slowly add the cream cheese, stirring constantly.

  4. Simmer mixture until thick.

  5. Add salt and pepper.

  6. Saute mushrooms and scallions in a nonstick skillet sprayed with cooking spray.

  7. Cook fettucini according to package directions.
