  1. 2 lbs 908g / 32oz Bass fillets - cut serving size

  2. 1 cup 62g / 2 1/5oz All-purpose flour

  3. 1 cup 62g / 2 1/5oz Cornstarch

  4. 1/4 teaspoon 1 1/3ml Baking soda

  5. 1/4 teaspoon 1 1/3ml Salt

  6. 1/8 teaspoon 0.6ml Freshly-ground black pepper

  7. 1 Egg - well beaten

  8. 1 1/2 cups 355ml Water

  9. Peanut oil - for frying

  1. Combine flour, cornstarch, baking soda, salt and pepper. Beat egg and water together, add to the dry mix and stir until smooth.

  2. Dip fish fillets in batter, and fry until golden-brown in peanut oil heated to 375 degrees.
