  1. 1/4 c Vegetable oil

  2. 1/4 c Olive oil

  3. 2 ea Eggs, beaten

  4. 1 lg Eggplant, cut into 1/2 inch

  5. -rounds

  6. Salt to taste

  1. Heat oils in a heavy skillet on high heat till the oil sizzles, then lower to medium.

  2. Dip slices of eggplant into the beaten egg & fry for about 4 minutes on each side, till browned.

  3. The coating will be crisp & the eggplant tender.

  4. Reduce heat if necessary.

  5. Drain on paper towels & sprinkle with salt.

  6. Serve immediately.
