  1. 1 cup 198g / 7oz Butter - (2 sticks) - room temperature

  2. 1/4 cup 82g / 2.9oz Pure maple syrup

  3. 1/2 teaspoon 2 1/2ml Salt

  4. 1/2 teaspoon 2 1/2ml Ground allspice

  5. 1/2 teaspoon 2 1/2ml Freshly-ground black pepper

  6. 8 teaspoons 40ml Red-skinned sweet potatoes (yams) (small)

  1. Mix first 5 ingredients in medium bowl. (Can be made 3 days ahead. Cover and chill. Bring to room temperature before using.)

  2. Preheat oven to 375 degrees. Lightly pierce potatoes all over with fork. Set potatoes directly on oven rack; bake until tender when pierced with skewer, about 1 hour.

  3. Cut cross in top of each potato. Using oven mitts to protect hands, squeeze potatoes gently in from sides, forcing crosses to open. Spoon 1 tablespoon butter into each potato. Serve, passing remaining butter separately.

  4. This recipe yields 8 servings.
