  1. Mississippi Barbecued Pork

  2. 2 1/2 lbs pork butt roast

  3. 1 TBS corn oil

  4. 4 oz can tomato Sauce

  5. 1/4 cup cider vinegar

  6. 1/4 cup Worcestershire sauce

  7. 1/4 cup brown sugar

  8. 1/2 teaspoon celery seed

  9. 1/2 teaspoon chili powder

  10. salt and pepper to taste

  11. Dash or two of red pepper sauce (to taste)

  12. These amounts need to be increased for larger roasts

  13. Heat oven to 350 degrees or can cook on med-Low on stove-top. Cook

  14. with tight fitting lid on pan to keep in the juices. Randomly

  15. pierce the roast with a knife then brown it all over. Combine the

  16. remaining ingredients in a bowl then add to the roast and bring to

  17. boil, then reduce the heat to a simmer. Cover and either keep

  18. cooking (turning every now and then) or place in the oven and bake

  19. for 2 hours or till fork tender and meat falls from the bone.

  20. While baking one can baste and turn about every 45 mins or so.
