  1. 1 1/4 cups graham cracker crumbs

  2. 1/4 cup butter, melted

  3. 1 (8-ounce) package cream cheese, softened

  4. 1/2 cup granulated sugar

  5. 1 tablespoon lemon juice

  6. 1 teaspoon vanilla, divided use

  7. 1/8 teaspoon salt

  8. 2 large eggs

  9. 1 cup sour cream

  10. 2 tablespoons granulated sugar

  1. Combine graham cracker crumbs with melted butter and press into a lightly buttered 8" pie plate. Beat softened cream cheese until fluffy. Gradually blend in sugar, lemon juice, half of the vanilla, and salt. Add eggs, one at a time; beating well after each. Pour into the graham cracker crust. Bake at 325°F (160°C) until the center is set, about 25 to 30 minutes. Cool. Combine sour cream, 2 tablespoons sugar, and remaining vanilla. Spoon onto the cooled pie. Chill at least 2 hours.
