  1. 3 ea Bacon slice; cut in

  2. 1" piece

  3. 1 lb Bluefish fillets;

  4. 1" pieces

  5. 1 c Celery; chopped

  6. 1/2 T Parsley, fresh; chopped

  7. 1/4 t Pepper, black

  8. 1/2 t Basil, dried

  9. 3 T Butter

  10. 13 oz Evaporated milk

  11. 2 ea Onion, med; chopped

  12. 2 ea Potato, large; peeled/cubed

  13. 3 c ;Water

  14. 1 1/2 t Salt

  15. 3/4 t Tarragon, dried

  16. 1/2 t Rosemary, dried; crushed

  17. 3 T Flour

  18. 4 to 5 minutes or until fish begins to brown. Add all except butter, flour, and evaporated milk, and simmer

  19. 20 minutes or until potatoes are tender. Melt

  20. 3 tablespoons butter in a heavy saucepan over low heat; add flour, stirring until smooth. Cook

  21. 1 minute, stirring constantly. Gradually add milk; cook over medium heat, stirring constantly, until thickened and bubbly. Stir white sauce into fish mixture; simmer, stirring occasionally, for 20 minutes or until thickened.
