  1. 3 lg Onions, chopped

  2. 4 lg Green bell peppers, chopped

  3. 4 lg Tomatoes, peeled & chopped

  4. 1 lb Yellow squash, chopped

  5. 2 md Potatoes, cubed

  6. 5 tb Olive oil

  7. 2 ea Garlic cloves, minced

  8. 2 tb Chopped parsley

  9. 1 1/2 ts Salt

  1. Heat oil & saute onions for a few minutes.

  2. Add remaining ingredients & a little water.

  3. Cover & simmer for 40 minutes, stirring occasionally.
