  7. Shrimps, peeled and deveined

  8. Small onion, peeled and cut into 8 sections

  9. Ripe tomato, cut into 8 sections

  10. Large eggs, lightly beaten

  11. Cooked long-grain rice

  12. Spring onion (scallion)

  13. Sprig fresh coriander (cilantro), coarsely chopped

  14. Maggi sauce

  15. Fish sauce

  16. Salt

  17. Freshly ground white pepper

  1. Heat oil in a wok over medium heat. Addthe garlic and stir-fry about 1 minute.

  2. Add the shrimps and cook 2 to 3 minutes.

  3. Add the onion and tomato and stir several times. Push the contents tothe sides, making a well in the centre.

  4. Add the eggs, stirring quickly to preventcooking through. Add the rice, mix well and continue to cook and stiruntil the mixture is heated through.

  5. to make the seasoning mixture, in a smallbowl, combine the Maggi sauce, fish sauce, salt and pepper.

  6. Add the seasoning mixture to he rice. Stira few times until all the ingredients are well combined, and add thechopped scallion. Remove to a platter and garnish with fresh coriander.
