  1. Zucchini and Brown Rice Casserole

  2. 1 cup raw brown rice

  3. 1 tbsp veg oil

  4. 2 tsp fresh ginger juice

  5. 1/2 cup green onion chopped

  6. 3 med zucchini sliced

  7. 1/4" thick

  8. 1 med green pepper chopped

  9. 3 med tomatoes chunked

  10. 2 cups stock or water

  11. 3 bouillon cubes (optional, if using water)

  12. 1 tbsp soy sauce or to taste

  13. 1 clove garlic pressed Saute rice in oil until golden brown. Spread evenly in a glass

  14. 13x9" baking dish, swishing rice around in the dish first to grease

  15. the sides. Layer vegetables over rice in order given. Dissolve

  16. cubes (if using) in water, add soy sauce, ginger juice and garlic,

  17. then pour mixture over casserole. Cover with foil and bake 350F

  18. 1 hr

  19. 15 min until liquid is absorbed and rice is done.
