  2. 1 package ( 14 oz ) reduced-fat smoked turkey kielbasa , cut into 1/2 -inch slices

  3. 2 small onions , quartered and separated

  4. 1 cup shredded carrots

  5. 1 can ( 8 oz ) un-sweetened pineapple chunks

  6. 1 Tbs. cornstarch

  7. 1/2 to 1 tsp. ground ginger

  8. 6 Tbs. water

  9. 2 Tbs. reduced-sodium soy sauce

  10. Hot cooked rice , optional

  1. In a large skillet, stir-fry sausage for 3 – 4 minutes or until lightly browned. Add onions and carrots; stir-fry until crisp-tender. Drain pineapple, reserving juice. Add pineapple to sausage mixture.

  2. In a small bowl, combine cornstarch and ginger. Stir in the water, soy sauce and reserved pineapple juice until smooth. Add to the skillet. Bring to a boil; cook and stir for 1 – 2 minutes or until thickened. Serve over rice if desired. Yield: 4 servings.
