  1. 4 egg whites

  2. 220 g caster sugar

  3. 2 tbsp cornflour , sifted

  4. 2 tsp white vinegar

  5. 150 g low fat cream cheese , at room temperature

  6. 250 g low-fat fromage frais

  7. 2 medium peaches , sliced

  8. 2 kiwi fruit , peeled and sliced

  9. 2 passion fruit , halved

  1. Preheat oven to 150C/130 fan/gas 2. Mark an 18cm-diameter circle on a piece of baking paper, then place, marked side down, onto an oven tray. Beat egg whites in a large bowl with an electric mixer until stiff peaks form.

  2. Gradually add sugar, then continue beating until mixture is soft and glossy. Fold cornflour and vinegar into mixture until just combined. Shape mixture onto baking paper, using marking as a guide. Reduce oven to 120C/100 fan/gas ½ and bake for 1 hour 20 minutes. Turn off and allow to cool completely in oven.

  3. Beat cream cheese and fromage frais with an electric mixer for 3–4 minutes, then spread over meringue and top with sliced fruit and passion fruit pulp.
