  1. 1 1/2 - 2 cups of Arborio rice

  2. 2 tbs olive oil

  3. 1-2 pats of butter

  4. 1 small onion

  5. 4 garlic cloves

  6. 1/2 cup white wine

  7. 4-5 cups of chicken stock

  8. 3/4 pound of shrimp - shelled & deveined

  9. 1 cup of mushroom s (I like shitakes the best!)

  10. 1/2 cup parmesan

  11. Salt & pepper to taste

  1. Chop garlic, onion and mushrooms & sauté for about 5 minutes in the butter & olive oil

  2. Add the rice and stir for about 2 more minutes

  3. Add the wine and reduce

  4. Start adding the hot chicken stock about a cup at a time

  5. Continue stirring and adding stock as the rice soaks it up, about 20 min from when the wine was reduced

  6. About ½ way through, add the shrimp

  7. Take it off the stove and add the parmesan, salt & pepper to taste

  8. Let it sit covered for about 5 min

  9. The rice should be rich & creamy but still al-dente
