  1. 2 1/2 cups 156g / 5 1/2oz Flour

  2. 1 1/2 cups 297g / 10oz Sugar

  3. 1 cup 146g / 5.1oz Pecans - chopped

  4. 1/2 cup 118ml Oatmeal - quick, uncooked

  5. 1 tablespoon 15ml Baking powder

  6. 1 teaspoon 5ml Salt

  7. 1 teaspoon 5ml Cinnamon

  8. 4 Eggs

  9. 1 Zucchini - shredded (medium)

  10. 3/4 cup 177ml Oil

  1. Grease 12 3 inch muffin pan cups. Preheat oven to 400F. In large bowl, measure first 7 ingredients. In med. bowl, beat eggs, stir in zucchini and oil. Stir mixture all at once into flour mixture just until flour is moistened. Spoon lumpy batter into muffin cups. Bake 25 min. or until toothpick trick works.
