  1. Chicken:

  2. 4 boneless, skinless chicken breasts, pounded to even thickness

  3. l/2 teaspoon salt

  4. 1/4 teaspoon freshly ground black pepper

  5. 4 frozen cream cheese stuffed jalapeno poppers, thawed

  6. Dressing:

  7. 1 lime, juiced

  8. 1/2 cup honey

  9. 1/2 cup oil

  10. 1 cup finely crushed salsa-flavored tortilla chips

  11. Black Bean and Watermelon Salsa:

  12. 1 can black beans, drained

  13. 1 cup chopped and seeded watermelon

  14. 1/4 cup diced red onion

  15. cilantro sprigs for garnish, if desired

  1. Preheat oven to 350 degrees. Prepare Chicken: Sprinkle chicken with salt and pepper. Place 1 jalapeno popper on small end of each chicken breast half; roll up, tucking in ends.

  2. Prepare Dressing: Mix together lime juice, honey and oil. Dip chicken, first in Dressing and then in crushed tortilla chips. Place in greased shallow baking dish and bake about 30 minutes in oven or until chicken is browned and fork tender.

  3. Meanwhile, prepare Black Bean and Watermelon Salsa: Mix together black beans, watermelon and red onion.

  4. Serve topped with Black Bean and Watermelon Salsa and garnished with cilantro sprigs.
