  1. 2 sticks (1 cup) unsalted butter, at room temperature

  2. 1/4 cup confectioners' sugar, plus extra for coating

  3. 1 Tbsp water

  4. 2 tsp vanilla extract

  5. 2 cups all-purpose flour

  6. 1 cup finely chopped pecans

  1. Heat oven to 300°F. You'll need a baking sheet(s).2. Beat butter and sugar with mixer on medium-high speed until fluffy. Beat in water and vanilla. With mixer on low, beat in flour just until blended. Stir in pecans.3. For each cookie, form a scant 2 tablespoons dough into a small roll, about 1 1/2 in. long. (Dough is sticky, so moisten hands with water to form.)4. Bake 1 in. apart on ungreased baking sheet 20 minutes or until lightly browned.5. While still hot, roll in confectioners' sugar to coat. Cool on wire rack. Store airtight at room temperature up to 2 weeks. Roll in more sugar, if needed, just before serving.
