  7. 1 lb Beef, ground

  8. 1 lb Pork, ground

  9. 1 Onion, grated

  10. 1/3 c Bread crumbs

  11. ds Salt

  12. ds Pepper

  13. ds Nutmeg

  14. 5 Eggwhites, beaten stiff

  15. --SAUCE--

  16. 3 c Water

  17. 1 Onion, cut fine

  18. 4 Bay leaves

  19. 1 tb Sugar

  20. 1 t Salt

  21. 1/2 ts Allspice & peppercorns,

  22. - combined

  23. 1/4 c Tarragon vinegar

  24. 1 tb Flour

  25. 5 Egg yolks, beaten

  26. 1 Lemon, sliced

  27. Capers

  28. MEATBALLS: Mix all ingredients, adding beaten egg

  29. whites last. Form into balls. SAUCE: Boil first 6

  30. ingredients 30 minutes. Strain; bring to boiling

  31. point, add meat balls and simmer 15 minutes. Remove

  32. meat balls to hot platter, keeping them hot. Add

  33. vinegar to liquid. Dissolve flour in small amount of

  34. cold water, add to beaten yolks. Add this thickening

  35. mixture gradually to seasoned liquid, stirring

  36. constantly until smooth and thick; pour over meat

  37. balls and garnish with lemon slices and capers. - - - - - - - - - - - - - - - - - -
