  8. 2 TBSP STUFFED GREEN OLIVES , CHOPPED,

  10. CAN TOMATO SAUCE 1 TBSP SMALL CAPERS

  11. 2 TBSP SALT OR TO TASTE,

  12. 1/2TSP PEPPER

  13. 3 CUPS LOW SODIUM CHICKEN BROTH

  1. HEAT BACON DRIPPINGS IN A LARGE SKILLET AND BROWN CH.ICKEN. REMOVE CHICKEN FROM PAN. IN DRIPPINGS ADD RICE, SALT PORK, HAM, GARLIC AND ONION. SAUTE UNTIL RICE IS GOLDEN BROWN. ADD BROTH, SALT AND PEPPER OLIVES,GREEN PEPPER,TOMATO SAUCE AND STIR WELL. PLACE CHICKEN ON TOP OF RICE. COVER TIGHTLY. COOK ON LOW HEAT UNTIL RICE IS TENDER AND LIQUID IS ABSORBED
