  1. 50g (2oz) butter

  2. 25g (1oz) golden caster sugar

  3. vanilla pod, split lengthways

  4. 4 Braeburn apples, cored and sliced

  5. 4 all-butter croissants, split in half

  6. 142ml (5fl oz) creme fraiche

  1. Put the butter in a large non-stick frying pan and sprinkle with sugar. Add the vanilla pod and heat until the butter melts.

  2. Top with the apple slices and cook over a medium heat for 10 mins until caramelised and golden.

  3. Warm the croissants - you can do this in the oven or under the grill. Place a croissant on each plate and fill with the apple mixture and a dollop of crème fraîche.
