  8. 4 tb Unsalted butter

  9. 1/2 c Sugar

  10. 4 ea Egg yolks

  11. In the top of a double boiler over simmering water

  12. combine butter, sugar, lemon juice, and egg yolks

  13. cook stirring constantly, until the mixture thickens

  14. enough to heavily coat the back of a spoon. (Do not

  15. let the mixture come to a boil or the egg yolks will

  16. curdle)

  17. Pour into a sterilized dry container stir in
