  1. 2 tbsp. vegetable oil

  2. 3 stalks celery, chopped

  3. 2 medium carrots, peeled and chopped

  4. 1 large onion, peeled and chopped

  5. 1 medium green bell pepper, stemmed, seeded and chopped

  6. 3 cloves garlic, peeled and minced

  7. 3 tbsp. tomato paste

  8. 4 cups fish stock or clam juice

  9. 2 large potatoes, peeled and diced

  10. 448 g can chopped tomatoes with juices

  11. 2 tbsp. worcestershire sauce

  12. 1 large jalapeno, stemmed and minced with seeds

  13. 1 tsp. dried thyme

  14. 1/2 tsp. salt

  15. 1/2 tsp. pepper

  16. 1 bay leaf

  17. 453 g chopped red snapper fillets

  1. Heat oil in a large pot. Add celery, carrots, onion, bell pepper and garlic. Cook 8 to 10 minutes until vegetables are tender, stirring frequently. Stir in tomato paste and cook 1 minute. Add fish stock or clam juice, potatoes, tomatoes with juices, worcestershire, jalapeno with seeds, thyme, salt, pepper and bay leaf. Simmer until potatoes are tender, stirring occasionally, about 30 minutes. Stir in snapper. Cover and simmer until fish is just cooked through, 8 to 10 minutes.
