  1. 2 cups great northern bean s

  2. 6 cups water

  3. lb. salt pork, diced (or bacon)

  4. 2 lbs. lean country style spareribs, cracked and cut into riblets (can use beef shortribs)

  5. 2 Tbs. olive oil

  6. 4 EACH chicken thighs and drumsticks

  7. 4 gloves garlic , minced

  8. 1 tsp. oregano

  9. 1 can (6 oz.) tomato paste

  10. 3/4 lb. Italian-style garlic sausage

  1. Using a 6-qt. Dutch oven, simmer beans in water (without salt) for 1 hour. Meanwhile, using a frying pan, brown salt pork over medium high heat, remove it from pan, and reserve. Add spareribs to drippings in pan and cook until browned; remove from pan. Add oil to pan and brown chicken; set aside.

  2. Then add to the cooked beans the garlic, oregano, tomato paste, garlic sausage, salt pork, spareribs, and chicken pieces. Cover and bake in a 325° oven for 2 hours or until meats are tender.

  3. Remove sausage, peel off casing, and slice on the diagonal ¼ inch thick. Return to pan. Check the amount of liquid; if necessary cook down juices or add water to make a medium-thick sauce.
