  12. Remove the peel from two oranges. Slice this peel very

  13. thin and cover with water. Boil until tender, adding

  14. additional water as it boils away. (Change the water

  15. often if the flavor becomes too bitter.)

  16. Peel the remaining oranges (the peel may be stored in

  17. freezer for later grating uses). Boil the pulp in 2

  18. qts. water until very soft. Strain through a bag with

  19. pressure. Re-strain without pressure. Mix this juice

  20. with the drained peel, the sugar, and the salt and boil until the jelly stage is reached. Let stand until

  21. slightly cool. Stir and pour into hot sterilized jars

  22. and seal with paraffin. --
