  1. Ingredients :Serves 8-10

  2. 200 g 200 g 1/4 cup 1 tablespoon 1 loaf

  3. Cheddar cheese, grated about 1 1/2 cups

  4. Butter, softened

  5. Finely chopped red capsicum (bell peppers)

  6. Sugar

  7. Fresh, unsliced bread, preferably pastel colored (must not be previously

  8. chilled or the bread will be too dry)

  1. Combine cheese, butter, capsicum and sugarin a bowl.

  2. Stir well or blend in a blender or foodprocessor until the mixture is smooth.

  3. Trim the top crust from the bread with abread knife. Slice the loaf lengthwise to make 4-5 thin slices.

  4. Spread the cheese mixture onto each slice.

  5. Roll each slice lengthwise, pressingtightly. Wrap in waxed paper and chill 1-2 hours in a refrigerator, oruntil the cheese mixture is firm.

  6. Cut into thin slices and serve.
