  1. Pork Carnitas

  2. 4 poblano chiles, roasted and peeled

  3. 1 onion, cut in half

  4. 1 pounds center loin roast, boneless and cut into 2 x 1/4-inch strips

  5. 1 clove garlic, finely chopped

  6. 2 teaspoons vegetable oil

  7. 2 teaspoons tomato paste

  8. 1 teaspoons red wine vinegar

  9. 1/4 teaspoons salt

  10. 1/2 pounds plum tomatoes, finely chopped

  11. guacamole

  12. flour or corn tortillas

  13. dairy sour cream

  14. Cut chiles and onion halves lengthwise into 1/4-inch strips. Cook

  15. pork, chiles, onion and garlic in oil in a 10-inch skillet over

  16. medium heat, stirring occasionally, until pork is no longer pink,

  17. about 12 minutes. Stir in tomato paste, vinegar, salt and tomatoes,

  18. cook until hot. Serve with tortillas, guacamole and sour cream.
