  1. 5 lbs 2270g / 80oz Lean beef - ground coarse

  2. 1 lb 454g / 16oz Suet - ground

  3. 1 1/2 Water

  4. 3 oz 85g Chili powder

  5. 2 tablespoons 30ml Salt

  6. 1 tablespoon 15ml Garlic powder

  7. 1 tablespoon 15ml Cumin

  8. 1 tablespoon 15ml Oregano

  9. 1 tablespoon 15ml Paprika

  10. 1/2 teaspoon 2 1/2ml Cayenne pepper

  1. Braise the meat in a large skillet. Add the water and bring to a boil. Add the ground suet and all the spices. Mix thoroughly. Stir every few minutes until your are sure the spices are blended and the meat is all well separated.

  2. After that you just need to stir enough to keep it from sticking to the bottom of the skillet. Cook for 45 minutes to one hour.
