  2. THREE GRAIN MUFFINS

  6. 1 c All-bran cereal

  7. 1 c Rolled oats

  8. 1 c Boiling water

  9. 1/2 c Margarine -- melted

  10. -OR- unsaturated oil

  11. -- (such as soy or corn)

  12. 2 Eggs -- OR...

  13. 6 tb -Egg substitute

  14. 1 c Buttermilk

  15. 1/2 c Molasses

  16. 1/2 c Honey

  17. 1 t Vanilla

  18. 1 c California Dried Figs

  19. 1 1/2 c Whole wheat flour

  20. 1 c Unbleached or bread flour

  21. -OR half rye or millet flour

  22. - and half unbleached flour

  23. 1 t Baking soda

  24. 1 t Baking powder

  25. In a medium bowl, combine bran cereal, oats and boiling water. Add melted margarine, eggs, buttermilk,

  26. molasses, honey, vanilla, and figs. In a large bowl,

  27. blend whole wheat and unbleached flours, soda and powder. Add liquid ingredients, mix lightly, just

  28. until blended. Spoon into greased muffin tins (do not

  29. use muffin papers, they will stick). Bake in a 400

  30. 20 to 25 minutes. Makes

  31. 2 to

  32. dozen muffins.
