  1. 2 tsp olive oil or clarified butter (Ghee is traditionally used)

  2. 1 medium Onion, sliced

  3. 3/4 teaspoon Garlic, minced

  4. 3/4 teaspoon Ginger, fresh, peeled and minced

  5. 3/4 cup Rice

  6. 2 cups Chicken broth

  7. 1 tsp Cumin

  8. 1 tsp Coriander

  9. 1 Bay leaf

  10. tsp Saffron

  1. Heat the oil or butter in a heavy saucepan over medium heat.

  2. Add the onion and cook until soft.

  3. Add the garlic and ginger and cook for 2 minutes.

  4. Add the rice and cook for 2 minutes, stirring constantly.

  5. Add the remaining ingredients. Bring to a boil.

  6. Cover, reduce the heat and simmer 20 minutes. Serve warm.
