  1. Apple-Elderberry Pie

  2. tart apples, peeled and sliced, to form a mound in a pie pan

  3. 1/2 to 1 cup elderberries, pulled from their stems, washed and drained

  4. 1/2 to 1 cup sugar

  5. 2 tablespoons flour

  6. 1 tsp cinnamon

  7. 1/2 tsp nutmeg

  8. 1/2 tsp allspice

  9. 1/4 tsp ground cloves

  10. 1 tsp crumbled, dried basil

  11. butter

  12. unbaked pie crust

  13. 1/2 c flour

  14. 1/2 c sugar

  15. 2 tablespoons butter

  16. 1/2 tsp cinnamon

  17. 1/4 tsp allspice

  18. Cut up apples to fill pie pan; to assure plenty of fruit, slice

  19. enough to mound the pan high. Dump them into a bowl and line your

  20. pie pan with crust. Do *not* prick the crust, or your juices will

  21. leak between the crust and the pan and your pie will be stuck in

  22. the pan.

  23. Add elderberries, sugar, flour, and spices, and stir gently until

  24. the apple pieces are lightly coated with flour. Return to pie pan.

  25. Dot with butter. Top with Crumb Topping.

  26. Crumb Topping: Mix everything together until crumbly. Distribute

  27. over the top of the pie.

  28. 375 F for 45 minutes or until apples are done and pie is

  29. bubbly around the edges. Crust should be golden but not too brown.

  30. Cap with foil towards the end of cooking time if crust is getting

  31. too brown.
