  5. 1 pk Slivered almonds (2-oz)

  7. 1/3 c Butter or margarine;

  8. -softened

  9. 1/3 c Shortening

  10. 1 1/4 c Sugar

  11. 3 Eggs; separated

  12. 1 ts Lemon rind; grated

  13. 2 tb Lemon juice

  14. 1 ts Vanilla extract

  15. 1 ts Almond extract

  16. 2 1/3 c All-purpose flour;sifted

  17. 2 ts Baking powder

  18. 1/4 ts Baking soda

  19. 3/4 ts Salt

  20. 3/4 c Milk

  21. 1/2 ts Cream of tartar

  22. 1/4 c Sugar

  23. 1 Almond

  24. Apricot glaze; see recipe

  26. Sprinkle chopped almonds into a well-greased 10-inch Bundt

  27. pan; set aside. Cream butter and shortening; gradually add

  28. 1-1/4 cups sugar, beating well at medium speed of an

  29. electric mixer. Add egg yolks, and beat well. Add lemon

  30. rind, juice, and flavorings; beat well.

  31. Combine flour, baking powder, soda, and salt. Add to

  32. creamed mixture alternately with milk, beginning and ending

  33. with flour mixture. Mix after each addition; set batter

  34. aside.

  35. Beat egg whites and cream of tartar until foamy. Gradually

  36. add 1/4 cup sugar, beating until stiff peaks form; fold egg

  37. white mixture into batter. Pour batter into prepared pan.

  38. Press whole almond just below surface of batter. Bake at

  39. 350 degrees for 50 to 55 minutes or until a wooden pick

  40. inserted in center comes out clean. Cool in pan 10

  41. minutes; remove from pan, and let cool completely on a wire

  42. rack. Drizzle Apricot Glaze over cake. Yield: one

  43. 10-inch cake.

  44. NOTE: Make Almond Legend Cake every New Year's Eve for a

  45. fun tradition at your house. Somewhere hidden in the baked

  46. cake will be a single whole almond. Whoever gets the

  47. almond in their slice of cake, according to legend, will

  48. enjoy good fortune during the year --
