  1. Oil-free Three-Bean Salad

  2. Serves 6 1/3 cup white vinegar

  3. 3 tablespoons chicken broth, defatted

  4. 2 tablespoons white grape juice

  5. 2 tablespoons sugar (or equivalent sweetener)

  6. 1 teaspoon celery seeds

  7. 1 clove garlic, minced

  8. 1 (8-ounce) can cut waxed beans, drained

  9. 1 (8-ounce) can green beans, drained

  10. 1 (8-ounce) can red kidney beans, drained

  11. 1/2 cup finely chopped onions

  12. 1/2 cup chopped green peppers

  13. In a small bowl, stir together the vinegar, broth, juice, sugar,

  14. celery seeds and garlic.

  15. In a large bowl, combine the waxed beans, green beans, kidney beans,

  16. onions and peppers. Add the dressing. Gently stir until combined.

  17. 4 to 24 hours to blend the

  18. flavors, stirring often.
