  1. 1/2 cup fat-free, cholesterol-free mayonnaise

  2. 3 tablespoons Dijon mustard

  3. 1/2 teaspoon grated onion

  4. 20 broiler-fryer chicken drummettes

  5. 2 cups cheese breadcrumbs

  6. 1/2 teaspoon freshly ground black pepper

  1. Preheat oven to 375 degrees F. Cover a 15 1/2 by 10 1/2 by 1-inch baking pan with foil and spray lightly with cooking spray. In small bowl, combine mayonnaise, mustard and onion. Brush each drummette with mayonnaise mixture and then roll in breadcrumbs. Arrange chicken in single layer on pan; sprinkle with pepper. Bake in oven until chicken is brown and fork can be inserted with ease, about 30 minutes.
