  2. GREEK CHICKEN AND SPAGHETTI

  6. 3 tb Olive Oil

  7. 1/4 c Lemon Juice -- fresh

  8. 1 Clove Garlic -- minced

  9. 1/2 ts Lemon Peel -- grated

  10. 1/2 ts Oregano -- leaves

  11. 1/8 ts White Pepper

  12. 8 Whole Chicken Breasts

  13. Without Skin

  14. 1 lb Spaghetti

  15. 1 tb Olive Oil

  16. 1/2 c Sweet Red Peppers --

  17. Chopped 1 Whole Yellow Squash --

  18. Summer,shredded

  19. 1 Whole Zucchini -- thinly

  20. Sliced 1/2 c Water -- cold

  21. 1 t Cornstarch

  22. 1/2 ts Instant Chicken Bouillon

  23. 1/2 ts Salt

  24. 1 d Cinnamon

  25. In small saucepan, combine first seven ingredients.

  26. Cook just until bubbly.

  27. Cool to room temperature. In medium bowl, combine

  28. cooled mixture and chicken

  29. that has been cut into strips; toss to coat. Marinate

  30. 20 to 30 minutes at room temperature. Prepare

  31. Creamette Spaghetti according to package directions;

  32. drain. In Dutch oven or large skillet, heat remaining

  33. 1 tablespoon olive oil. Add chicken mixture and red

  34. pepper. Stir-fry just until

  35. chicken is slightly pink. Add yellow squash and zucchini. Cook until hot. In

  36. small bowl, blend water, cornstarch, bouillon and salt. Add to chicken mixture. Cook, stirring

  37. constantly, until thickened and translucent. Add hot

  38. spaghetti; toss to mix. Heat through. Arrange on wa

  39. rm serving platter. Serve immediately. Refrigerate

  40. leftovers.

  41. NOTES: This is excellent but the amount of chicken

  42. needs to be doubled as well as the marinade

  43. ingredients or else the pasta amount cut in half. It

  44. is also excellent cold served as a pasta salad. This

  45. might be good with rotelle

  46. pasta as well.
