  1. ROUX:

  2. 1/4 lb. Butter

  3. 1/4 lb. flour

  4. INGREDIENTS:

  5. 1 cup heavy cream

  6. 3 cups milk

  7. 2 cups fish stock or water and fish base

  8. 1/4 lb. crab roe

  9. 1 lb. white crabmeat (Special)

  10. 1 cup chopped celery , lightly sauteed with

  11. 1/4 cup chopped carrot s

  12. 1/4 cup chopped onion

  13. 1/4 cup sherry wine

  14. 1 TBL. Tabasco Sauce

  15. 1 TBL. Worcestershire Sauce

  1. Melt butter, stir in flour to make roux. Add milk and cream. Bring to a boil. Add remaining ingredients, simmer for 20 minutes. Garnish with sherried whipped cream.
