  1. 2 cloves garlic , finely chopped

  2. 1 red chillies , seeds removed, roughly chopped

  3. 1cm root ginger , grated

  4. 1 tbsp palm sugar

  5. 2-3 tbsp fish sauce

  6. 1-2 lime , halved

  7. 1 splashes water

  8. 2 shallots , thinly sliced

  9. 1 handfuls cos lettuce

  10. 1 handfuls cherry tomatoes , halved mixed fresh herbs , such as basil, mint, flat-leafed parsley, coriander and chives

  11. 1 small handfuls chopped peanuts

  1. Asian dressing Method 1. Put the garlic, red chilli, ginger, palm sugar, fish sauce, limes, water and shallots into a pestle and mortar. Mash together well, making sure the garlic and chilli have been pounded into a pulp. Remove the lime halves.

  2. Arrange the lettuce, tomatoes and herbs in a salad bowl and pour the dressing over. Toss well and scatter with the peanuts. Serve straightaway.
