  1. 1/4 cup 49g / 1.7oz Unsalted butter - (1/2 stick) - room temperature

  2. 1/4 cup 23g / 0.8oz Minced seeded jalapeño chilies

  3. 1 tablespoon 15ml Fresh lime juice

  4. 2 teaspoons 10ml Grated lime peel

  5. Salt - to taste

  6. Freshly-ground black pepper - to taste

  7. 8 Thin slices whole grain bread

  8. 1 Watercress - thick stems trimmed

  1. Mix first 4 ingredients in small bowl to blend. Season to taste with salt and pepper. (Chili-lime butter can be made 1 week ahead. Cover and refrigerate. Bring to room temperature before using.)

  2. Spread chili-lime butter on 4 bread slices. Top with watercress. Top with remaining bread slices. Cut each sandwich in half and serve.

  3. This recipe yields 4 sandwiches.
