  1. 2 cups Chopped cooked chicken

  2. cup Mayonnaise

  3. 2 Scallions, minced

  4. teaspoon Dried basil

  5. teaspoon Dried thyme

  6. teaspoon Freshly ground pepper

  7. cup Grated Swiss cheese

  8. cup Grated Parmesan cheese

  9. 4 English muffins, split

  1. Preheat oven to 350. In a medium size bowl, combine chicken, mayonnaise & scallions. Blend in basil, thyme & pepper. Add Swiss cheese & 2 tbsp. of the Parmesan; blend well.

  2. Spread chicken mixture over English muffin ½'s, dividing evenly.

  3. Sprinkle w/ remaining Parmesan cheese. Arange on a foil lined baking sheet & bake about 10 minutes until browned on top.

  4. Cut muffins into ¼'s & serve hot.
