  1. 1 ready made pie crust

  2. Filling

  3. 1 cup cooked ham , cubed

  4. 1/2 cup wild rice , cooked

  5. 1/3 cup red pepper , finely chopped

  6. 1/4 cup scallion , thinly sliced

  7. 1 4 1/2 oz. jar mushrooms , sliced and well drained

  8. custard

  9. 3 eggs

  10. 1 cup sour cream

  11. 1 tbls. Dijon mustard

  12. salt and pepper to taste

  13. Topping

  14. 2 cups swiss cheese , grated

  1. Preheat oven to 425

  2. Using a 9 inch pie pan, press crust into bottom and up sides of pan

  3. DO NOT DOCK CRUST

  4. Bake for 10-12 minutes

  5. Remove from oven and lower heat to 400

  6. In mixing bowl, add all filling ingredients and mix well

  7. In another mixing bowl, add eggs and beat until blended

  8. Add remaining custard ingredients and mix well

  9. Sprinkle 1 cup of Swiss cheese over bottom of cooled crust

  10. Spread filling mixture over cheese

  11. Pour custard mixture over filling

  12. Sprinkle with remaining Swiss cheese

  13. Bake for 30-35 minutes

  14. Let sit for 10 minutes before serving
